Cauliflower Skewers with Peanut Dipping Sauce

These grilled cauliflower skewers are delicious with or without the dipping sauce. Easy, healthy, and fun! And appropriately, they are the recipe from the "Food that's Fun: A Recipe for Summer" Feed Your Fire podcast episode.

You'll Need:

Half head of cauliflower, chopped into florets

Skewers

1/2 C. Yogurt

1 T. red curry paste

2 T. orange juice

2 T. maple syrup

One small red onion

1 C. fresh cubed pineapple

Salt and pepper

2T. natural peanut butter

1 T. soy sauce

1 T. maple syrup

1 t. rice wine vinegar

Juice of half a lime

1/2 t. chili crunch (optional)

Dash of garlic powder 

Dsh of ground ginger

2 T. avocado oil

Soak wooden skewers in water for at least an hour or overnight.

In a large bowl combine yogurt, red curry paste, orange juice and maple syrup and stir to combine. Add in the cauliflower and toss till well coated. Season with salt and pepper. It's best to let this sit for a an hour, if possible, or even better—overnight. 

Meanwhile make the dipping sauce. In a small bowl whisk together peanut butter, soy sauce, maple syrup, rice wine vinegar, and lime juice. Add in chili crunch, garlic powder, ginger and a little bit of water to thin it out as needed. Set aside in refrigerator. 

Take each skewer and alternatively thread in cauliflower, then onion, then pineaplle and repeating.  Each skewer should be able to holder 2-3 pieces of cauliflower. Brush each with avocado oil and set aside. This can be doen the night before. oil that can withstand the high heat of a grill, like an avocado oil, and you'll want to season them with salt and pepper.

Heat grill to medium to medium-high. Place skewers on grill and let cook for 5 minutes, and then carefully turn the skewers with tongs.  Do this a few times for 15-20 minutes until cauliflower is tender and remove from heat. Serve skewers with sauce.
