You'll Need:
A bunch of ruby red beets, stems removed
1/4 C. olive oil
One small red onion, sliced thin
1 C. white vinegar
2 t. sugar
Salt and pepper
Pint of strawberries , washed and stems removed
4 oz. goat cheese
2 T. chopped almonds
1 T. balsamic vinegar
1 T. orange juice
2 T. dark chocolate
Microgreens (optional for garnish)
Preheat your oven to 375 degrees.
Wash the beets thoroughly under cold water. Put them on a baking sheet lined with aluminum foil or parchment paper and drizzle them with 2 T. olive oil. Place in the oven for about an hour until the beets are tender. Let cool.
While beets are in the oven, we're going to do a quick pickle with our onion. In a container combine 1C. white vinegar with 1 C. cool water, 1 t. salt and 1 t. sugar. Combine with sliced onions and store in refrigerator.
Preferably wearing golves, peel the skin off of these beets and dice them. Drizzle them with a mixture of remaining 2 T. olive oil, orange juice and balsamic vinegar and some salt and pepper. Set aside.
Slice goat cheese into 4-8 pieces and form into ball shape. Coat them in chopped almonds.
Melt chocolate in microwave for about 30 seconds and stir until smooth.
Then take your time plating. You want this to be beautiful and that is part of the recipe for this sensual experience. Consider putting the beets in the center of a white plate, and then using the pickled onions, the strawberry and the coated goat cheese as accent ingredients in an artful way. Then take the dark chocolate using the back of a spoon, smear it along the outside of the plate decoratively. Garnish with microgreens, if desired.
