Ingredients

8 oz (½ lb) wide flat rice noodles

3/4 lb flank steak (or chicken, shrimp, or tofu)

2 T. soy sauce

1 T. maple syrup
Sauce

¼ C. oyster sauce
-
2 T. soy sauce
-
1½ T. dark soy sauce
-
1 T. fish sauce
-
1 T. maple syrup
Veggies & Aromatics
-
2 cloves garlic, minced
-
1 bunch Chinese broccoli or broccolini (stems and leaves separated, stems sliced on the diagonal)
Other
-
3-4 eggs (one per portion)

Avocado oil
Instructions
Fill a large pot with water and bring it to a simmer (not a boil). Turn off heat. Add the rice noodles and let them soak until al dente, about 20–25 minutes. Once tender, drain and rinse under cool water to stop cooking. Set aside.
Meanwhile, thinly slice the flank steak against the grain. In a Ziploc bag or bowl, combine sliced beef with 2 T. soy sauce and 1 T. maple syrup. Let it marinate in the refridgerator while preparing other ingredients.
In a small bowl, mix together oyster sauce, soy sauce, dark soy sauce, fish sauce, and maple syrup. for the sauce.
Parepare garlic and chines broccoli/broccolini
Crack one egg a small bowl.
Heat a large skillet over high heat and add about 2 T. avocado oil. Add in the beef in a slingle layer without adding any of the remaining marinade. Sear the beef in for about 1-2 minutes undisturbed, then toss and let cook through. Remove from skillet and set aside
Wipe out skilet and return to the stove and add another 2-3 T. avocado oil. Sauté some broccoli stems about one minute, add garlic and broccoli leaves and stir-fry briefly. Push veggies to the side. Add more oil if needed. Pour in the cracked egg. Scramble it quickly with your spatula and push to the side of the pan with veggies.
Add a heaping handful of noodles and 2-3 T. of sauce. Toss to coat, then let sit undisturbed for 1–2 minutes to caramelize. Add in one quater to one-third of the cooked beef depending on portion sizes. Toss everything together. Plate and keep warm.
Crack another egg in the small bowl and repeat the process until all portions are prepared.
